We go through a lot of bananas at our house. When they’re too ripe to eat, I either slice and freeze them in baggies for smoothies, or I bake banana bread. I found this recipe on the Baking Bird website, and Kylie (the blogger) mentions that she got it from Veganomincon. Kylie tweaked the recipe a bit, as did I, so I don’t know how close it is to the original recipe. But I do know that it’s delicious and easy to make.
Vegan Banana Bread
Ingredients
- 2 large or 3 small very ripe bananas
- ½ cup applesauce (I used cinnamon spiced)
- ¼ cup canola oil
- ½ cup brown sugar
- 2 tablespoons molasses
- 1 teaspoon vanilla
- 2 cups whole wheat flour
- ¾ teaspoon baking soda
- 1 teaspoon ground cinnamon
- ½ teaspoon salt
- ¼ cup chopped walnuts, optional
- 1 cup vegan chocolate chips (optional)
Instructions
- Preheat the oven to 350 degrees F. Lightly grease a 9 x 5-inch loaf pan.
- In a large mixing bowl, mash the bananas really well. Add the sugar, applesauce, oil, vanilla and molasses, and whisk.
- Sift in the flour, baking soda, spices, and salt. Use a wooden spoon to mix until the wet and dry ingredients are just combined. (If you’re using nuts or chocolate chips, fold them in here.)
- Transfer the batter to the prepared pan and bake for 45 to 50 minutes (it took 45 for me). The top should be lightly browned and a knife inserted through the center should come out clean.
- Remove from the oven and let cool!
